Hi everyone, I'm Cassandre and today I'm going to share with you a simple and delicious Japanese food - Doria with Bolognese Sauce. Doria, the name sounds like Italian cuisine, the appearance also looks like, but the interesting thing is that this baked rice is a foreign food born and bred in Japan! It is said that it was first born in a hotel in Yokohama, and because of the very good response from the customers, many foreign food shops have followed suit and put this baked rice on their own menu, and now, Doria has been considered a classic dish in Japanese foreign food shops!

How to make Doria?
Here is the recipe for Bolognese Doria:
☞ Baking pan size: 20cm long, 13.5cm wide, 4.5cm deep.
✎ Ingredients
☞ Bolognese Sauce
Ground Beef and pork 200g
Onion ½, about 130g, finely diced.
Garlic 1 clove
Carrot 90g, finely diced
Canned whole peeled tomatoes 400g
Tomato paste 15g
100ml red wine
Water or stock 120ml
1 tbsp dried Oregon
1 sliced allspice leaf
Salt and pepper to taste
☞ White sauce
butter 28g
Flour 28g
Milk 400ml
Salt a pinch
Pepper
☞ Turmeric Rice
Rice 1 cook cup (about 150g)
Turmeric powder ¼ tsp
220g of water (a little more than you would normally use to cook rice)
☞ Baked Cheese
Gruyere cheese 60g, shredded
✎ Methods Intructions
☞ Making Turmeric Rice
1. Wash the rice well.
2. Add ¼ tsp of turmeric and a little more water than usual, stir well, put it into the InstantPot and cook it in the normal rice programme.
☞ Preparation of Ingredients
1. Finely dice onion and carrot.
2. mince garlic
3. 400g canned peeled tomatoes, crushed, or you can use a homogeniser or juicer to make crushed tomatoes.
☞ Making the Bolognese Sauce
1. Heat the oil in a pan, add the chopped onions and carrots, cover and cook until the vegetables are soft, about 5-7 minutes.
2. add the chopped garlic and ground meat and cook, breaking up the meat with a spoon, until the meat is lightly browned and cooked through.
3. Pour in the red wine and stir well, then add the crushed tomatoes, tomato paste, Oregon spices and season with salt and pepper to taste.
4. Add water or stock, mix well, reduce the heat to low and cook the sauce uncovered for about 30-40 minutes. The longer you cook the sauce, the better it will taste, but don't overcook it, keep a little of the sauce (you can also simmer the sauce covered for about 40~50 minutes, then open the lid to reduce the sauce).
☞ Making the White Sauce
1. Melt the unsalted butter in a saucepan. Add the flour and stir with a whisk until bubbles form.
2. while stirring, add all the cold milk, do not add cold milk in batches, then turn down the heat to low and keep stirring.
3. Cook until slightly thickened, but still fluid and glossy, turn off the heat.
3. add black pepper and salt to taste (if you have nutmeg, you can also grate some to taste)
☞ Combine & Bake
1. Spread a layer of turmeric rice on the baking tray.
2. Pour the white sauce evenly, spoon the bolognese sauce in the middle, then sprinkle the cheese evenly on the top.
3. Preheat the oven to 220°C and bake for 15-18 minutes or until the top is golden brown.
